It hasn't stood still for 40 years, rotating at a metre a minute, 47 spectacular floors above the city. As the grey-pink veil of evening envelops the sunset, the plush room acquires a warm, translucent glow from watermelon pink lamps and myriad Campari bottles.

A scaffold of slim olive oil breadsticks is perched over paper-thin shaved jamon scattered with intensely sweet, roasted baby tomatoes, as well as slightly insipid shaved marmande (beefsteak) tomatoes. Sweet, lemon-brined organic chicken is appealingly tender, with a perky crisp-skinned leg, luscious garlic butter potatoes and a drizzle of chianti pan juices that elevate it to greatness. An elegant and divine stonefruit "bellini frappe" is handsomely presented in an ice bowl, consisting of vanilla spiked white peach granite, and poached stone fruits splashed generously with champagne.

Michael Moore's professional, attentive and knowledgeable team take the Summit back to its rightful place at the top of Sydney dining.
